VINIFICATION: soft pressing, fermentation at controlled temperatures in cement vats.
MATURATION: second fermentation in the bottle with permanence on the lees for at least 60 months. Aging in the bottle for at least 6 months after disgorgement.
ALCOHOLIC STRENGTH: 12.5 % Vol
BOTTLES PRODUCED: 8.000 – 9.000
PAIRINGS: Perfect with hors d'oeuvres, medium-aged cheeses and cured meats, white meat dishes, truffles and fish.
SERVICE TEMPERATURE: 8°C – 10°C
ORGANOLEPTIC NOTES: : Straw yellow color with golden reflections, fine and continuous perlage and abundant and creamy foam with good persistence of a thin crown. Intense aroma of yellow fruit and candied citrus fruits combined with yeast fragrances. Persistent taste, excellent acidity and a pleasant finish of yellow fruit and bread crust.
