VINIFICATION: soft pressing, fermentation at controlled temperatures in cement vats.
MATURATION: second fermentation in the bottle with permanence on the lees for at least 36 months. Aging in the bottle for at least 3 months after disgorgement.
ALCOHOLIC STRENGTH: 12 % Vol
BOTTLES PRODUCED: 18.000
PAIRINGS: Perfect with hors d'oeuvres, medium-aged cheeses and cured meats, white meat and fish dishes. Serve at 7/8°C
SERVICE TEMPERATURE: 6°C – 8°C
ORGANOLEPTIC NOTES: yellow color with slight green reflections, fine, light and persistent perlage. Intense and fresh bouquet fruity notes of peach and green apple delicately combined with fragrances of white flowers. Clean and harmonious taste, excellent acidity and a pleasant bread crust finish.
