VINIFICATION: first fermentation off skins after a short maceration on the skins at controlled temperature in cement vat.
MATURATION: second fermentation in the bottle, maturation on the yeasts for 36 months . Refining in bottle for 4 months after degorgement .
ALCOHOL STRENGTH: 12,5 % by Vol
BOTTLES PRODUCED: 10.000
FOOD PAIRINGS: It ‘s perfect with white and red meats dishes, grilled, roast and boiled.
SERVICE TEMPERATURE: 8° C – 10° C
TASTING NOTES: it’s characterized by a light pink color with light onion leaf colour hues , a fine perlage. an Intense and elegant bouquet, notes of red ripe berry fruits, redcurrants, fraises, raspberries and hints of citrus and spice. Elegant and velvety flavour, good structure and good acidity
